January of this year I completed the WHOLE 30 Paleo challenge. For those of you who have not heard of it, it is life changing, + you can find out more about it here. After the whole 30, I decided to keep the paleo diet going + have continued this diet the last 2 months! After the whole 30, you are technically allowed to have some treats on occasion [paleo of course]. So naturally, I went on Pinterest + I discovered this amazing recipe. I made it one night for a girls movie night + it has been a hit among friends!


1 cup sunflower seed butter or almond butter

1 egg

1/2 cup cocoa powder

1 cup coconut sugar

1/2 cup dark chocolate chips

1 tsp baking soda

1 tsp vanilla extract

First, heat your oven to 350 degrees.  Now you can start prepping! Mix together the almond butter and coconut sugar in a large bowl until all is evenly mixed. Then add the egg to the mixture and mix well until the egg is completely saturated in the mixture.

Next, add the cocoa powder and use your hands to mix everything together evenly. you can slowly add the cocoa powder and mix in gradually if you would like.

Now, add all of the last ingredients into the mixture! If you want these to be truly paleo, please make sure you are using 75% cacao dark chocolate. If you cannot find chocolate chips like this, you can always use a dark chocolate bar + crush it up until it makes small chocolate chunks that you can add to the mixture [I’ve done this and it is super easy!].

Next, place the cookies on the a cookie sheet covered in parchment paper. Make 1 inch cookie balls and place them evenly around the pan.

Place the pan in the oven for 10 minutes. Remove the cookies from the oven and allow them to cool + transfer them to a cool surface.

NOW it is time to indulge in the sweetness- enjoy my lovely friends!
