
It’s a holly jolly Christmas time of year! And with that being said, there is no better time to make Holiday cookies than this season. I love chocolate + I LOVE peppermint… so why not combine them to be extra festive this season? I recently hosted a Christmas party at my apartment + made these yummy treats…. + they were quite the hit! I promise, your guests will not be disappointed.
INGREDIENTS
1 cup vegan butter
1 1/2 cups sugar
2 eggs
1 tsp vanilla extract
1 tsp peppermind extract
2/3 cup cocoa powder
3/4 tsp. baking soda
1/4 tsp. salt
1 1/2 cup chocolate chunk
1 cup crushed candy cane
To start, preheat the over to 350 degrees and wait for it to heat. Place the butter, sugar, eggs, vanilla, + peppermint extract into a bowl and combine and beat ingredients. This should create a light + fluffy mixture.
In a large bowl, stir together the flour, cocoa powered, baking soda + salt. Slowly, add the flour mixture to the wet ingredients until all is combined. Stir the mixture until it creates a dough.
Add in the chocolate chunks + crush peppermint saving a bit of extra peppermint for the top of the cookies.
Place cookies in a ball on a lined sheet of parchment paper. Sprinkle additional candy cane pieces on top.
Bake the cookies for 8 to 10 minutes + voila!
