
Gwyneth Paltrow is an amazing woman. I mean, she’s not only bubbly, endearing and effortlessly stylish, but she’s also a health fanatic + an amazing cook! I have her incredible It’s All Good cookbook + simply adore it. I snatched this recipe out of her cookbook + have since been using it for SO many fun, delicious recipes.
This mango avocado salad is seriously divine. The homemade balsamic-lime vinaigrette is to DIE for + makes this salad perfectly sweet + savory.
INGREDIENTS
2 ripe mangos [peeled!]
2 ripe avocados
Coarse Sea Salt
Balsamic-Lime Viniagarette
Handful of fresh basil leaves

First, peel the mango and core it thoroughly. Next cut the avocado in half and divide it into slices. Then place the basil around the plate. Scatter all pieces with a dash of salt.
In a separate bowl, stir up the vinaigrette !
INGREDIENTS
2 tbs balsamic vinegar
2 tbs brown rice syrup [I reduced mine to one]
2 tbs lime juice
1/4 cup EVOO
Dash of sea salt
Ground pepper
Once you have stirred up the vinaigrette, place it in a side bowl or container and use for up to a week!
VOILÀ! Now you have a savory + sweet salad that is delicious [ + even pretty to look at]

Yum! So fresh, delicious-looking, and healthy! Perfect for Summer indeed. That balsamic-lime vinaigrette is very intriguing! Must give it a go!
